Dried wood-ear fungus 木耳
soaked 20 min, torn

Eggs (medium) 鸡蛋
lightly beaten with a pinch of salt
1 tsp
Old ginger 老姜
minced
1 stalk
Spring onions 葱
sliced

Toasted sesame oil 麻油

Method · 做法

Soak the wood ear in cold water 20 minutes. Tear into bite pieces.

Heat 1 tbsp oil in a wok over medium-high heat. Sweat the ginger 30 seconds.

Add the wood ear. Toss for 1 minute.

Pour in the beaten eggs. Stir gently until just set, about 90 seconds.

Drizzle with sesame oil. Scatter spring onion. Serve immediately.
