300g spinach
Spring onions
washed thoroughly; thick stems trimmed
3 cloves
Garlic
thinly sliced
1 thin slice
Old ginger 老姜
1 tsp
Light soy sauce 生抽
1 tsp
Toasted sesame oil 麻油

Method · 做法

Wash the spinach in two changes of cold water. Spin or pat dry.

Heat 1 tbsp neutral oil in a wok over high heat. Add the garlic and ginger; stir 15 seconds, until just golden, not brown.

Add the spinach all at once. It will look like a mountain. Toss with tongs or chopsticks for 60 to 90 seconds; it collapses to a small pile.

Salt lightly. Off heat, drizzle with soy and sesame oil. Serve immediately, the spinach continues to wilt on the plate.
