Method · 做法

Bring a small saucepan of water to a rolling boil.

Lower the eggs in gently with a spoon. Set a timer.

For a runny yolk and just-set white, cook 6½ minutes. For a firmer yolk, 7½ minutes.

Drain and immediately rinse under cold water for 30 seconds (this stops cooking and makes peeling easier).

Tap, peel, halve. Drizzle with a few drops of soy sauce and sesame oil if you like.

If you are advised to avoid runny yolks (e.g. immune-compromised, raw-egg sensitivity), cook a further 2 to 3 minutes for a fully set yolk. UK Lion-stamp eggs are safe at this temperature for healthy adults including breastfeeding mothers.
