Introduced in week four to balance the warming richness of the late-month tonic soups. In TCM, snow fungus is a yin-nourishing ingredient. Its texture goes silky and jelly-like once cooked, and a small bowl in the afternoon is one of the small luxuries of the month.

1 dried piece (~40g)
Dried snow fungus (white wood-ear) 银耳
soaked 2 hours, hard stem trimmed, torn into florets
10 dates
Red dates (jujube) 红枣
pitted and slit
20g
Dried longan 桂圆
80g, to taste
Rock sugar 冰糖
10 berries
Goji berries 枸杞子
added at the end

Soak the snow fungus in cold water for two hours. Trim the hard yellow stem, tear into bite-size florets, and rinse.

Bring 1.5L of water to a boil. Add the snow fungus, dates, and longan.

Simmer with the lid slightly ajar for 1 hour. The broth thickens into a gentle silk.

Add the goji and rock sugar in the final 30 minutes. Stir until the sugar dissolves.

Serve warm. During the month, never serve this cold.
