1 dried piece (~30g)
Dried snow fungus (white wood-ear) 银耳
soaked 2 hours, hard stem trimmed
30g (dried)
Dried lotus seeds (cores removed) 莲子
soaked 30 min, bitter cores removed
8 dates
Red dates (jujube) 红枣
pitted
1 tbsp
Goji berries 枸杞子
added at the end
60g, to taste
Rock sugar 冰糖
Method · 做法

Soak the snow fungus 2 hours until fully expanded. Trim the hard yellow stem and tear into florets.

Soak lotus seeds 30 minutes; remove the bitter green cores.

Combine snow fungus, lotus seeds, and dates with 1.5L water. Bring to a boil, reduce to a low simmer with the lid ajar for 60 to 75 minutes. The broth should turn gently silky.

Stir in goji and rock sugar in the last 10 minutes.

Serve warm. Never serve cold during the month.
