Toasted sesame oil 麻油
200ml
Glutinous rice wine (Shaoxing) 黄酒/绍兴酒
to taste
Sea salt 盐
Method · 做法

Heat sesame oil low and slow. Add ginger, fry until fragrant and edges curl (5 min).

Add chicken, brown lightly.

Add rice wine, bring to hard boil 60 seconds, then add 100ml water.

Cover and simmer 20 minutes. Salt at end.

Most of the alcohol cooks off during the boil, but trace amounts can remain. If you are breastfeeding, time feeds two to three hours after eating, or skip the wine.
