Pork ribs 排骨
washed and chopped
400g (3 sections)
Lotus root (fresh or frozen) 莲藕
peeled, sliced into ½-inch rounds
3 to 4 slices
Old ginger 老姜
2 to 3 dates
Red dates (jujube) 红枣
2 tbsp
Glutinous rice wine (Shaoxing) 黄酒/绍兴酒
Shaoxing
to taste
Sea salt 盐
Method · 做法

Blanch the ribs in boiling water for 5 minutes. Drain and rinse.

Combine ribs, lotus root, ginger, red dates, and Shaoxing wine with 2L of water in a stockpot.

Bring to a boil, skim any foam, then reduce to a low simmer for 1.5 to 2 hours.

Salt at the table. The lotus root is delicious eaten with the ribs.

Most of the alcohol cooks off during the boil, but trace amounts can remain. If you are breastfeeding, time feeds two to three hours after eating, or skip the wine.
