Pork ribs 排骨
blanched
1 small (~500g)
Daikon (white radish) 白萝卜
peeled, cut into chunks
3 slices
Old ginger 老姜
1 tbsp
Glutinous rice wine (Shaoxing) 黄酒/绍兴酒
Shaoxing, optional
to taste
Sea salt 盐
Method · 做法

Blanch ribs in boiling water 5 min. Drain and rinse.

Combine ribs, daikon, ginger, and 1.8L water in a stockpot. Add Shaoxing if using.

Bring to boil, skim, then simmer covered on low for 75 to 90 minutes.

Salt at the table. The daikon is tender and sweet by the end.

Most of the alcohol cooks off during the boil, but trace amounts can remain. If you are breastfeeding, time feeds two to three hours after eating, or skip the wine.
