Pork liver 猪肝
sliced thin, soaked in cold water 20 min, drained
6 thin slices
Old ginger 老姜
1 tbsp
Goji berries 枸杞子
1 tbsp
Toasted sesame oil 麻油
to taste
Sea salt 盐
Method · 做法

Soak the sliced liver in cold water for 20 minutes; drain. This removes residual blood and bitterness.

Heat sesame oil in a pot. Sweat the ginger slices for 1 minute until fragrant.

Add 800ml water and bring to a gentle boil. Add goji.

Slide liver in piece by piece. Cook 90 seconds, it should just turn from pink to pale brown. Overcooked liver is the cardinal sin here.

Salt to taste. Eat immediately.
