2 kidneys (~300g)
Pork kidneys 猪腰
halved, white core removed, scored, soaked 30 min
5 slices
Old ginger 老姜
6 dates
Red dates (jujube) 红枣
pitted
1.5 tbsp
Goji berries 枸杞子
added in the last 5 minutes
1 tbsp
Glutinous rice wine (Shaoxing) 黄酒/绍兴酒
Shaoxing, optional
1 stalk
Spring onions 葱
for garnish
to taste

Halve the kidneys lengthwise. Carefully remove the white core and any membrane (this is what eliminates the bitter edge). Score the surface with a fine crosshatch, rinse thoroughly, then soak in cold water for 30 minutes.

Blanch the kidneys in boiling water for 30 seconds. Drain.

Combine ginger, red dates, and 800ml of water in a saucepan. Bring to a boil and simmer 15 minutes.

Add the kidneys and Shaoxing (if using). Simmer gently for 10 minutes. The kidneys should curl and turn pale; do not over-simmer or they go rubbery.

Stir in goji in the last 5 minutes. Salt at the table. Garnish with spring onion.

Buy the kidneys fresh that day. Limit to once a week if you are also taking prenatal vitamins (cumulative organ-meat intake).
Most of the alcohol cooks off during the boil, but trace amounts can remain. If you are breastfeeding, time feeds two to three hours after eating, or skip the wine.
