30g (dried)
Dried lotus seeds (cores removed) 莲子
soaked 30 min, bitter green core removed
10g (dried lily bulb)
Dried lily bulb 百合
soaked 20 min, rinsed
8 dates
Red dates (jujube) 红枣
pitted
40g, to taste
Rock sugar 冰糖
Method · 做法

Soak lotus seeds for 30 minutes. Pop each one open and remove the green bitter core (this is non-negotiable: the core makes the dessert bitter).

Soak the lily bulb 20 minutes; rinse.

Combine lotus seeds, lily bulb, and dates with 1L water. Bring to a boil, reduce to a steady simmer for 40 to 50 minutes until the lotus seeds are tender.

Stir in rock sugar in the last 5 minutes. Serve warm.
