Pork ribs 排骨
30g (dried)
Dried kelp (kombu) 海带
soaked 30 min, rinsed, cut into ribbons
4 slices
Old ginger 老姜
1 stalk
Spring onions 葱
to taste
Sea salt 盐
Method · 做法

Soak the kelp in cold water for 30 minutes; rinse thoroughly. Cut into 4cm ribbons.

Blanch the ribs in boiling water for 2 minutes. Drain.

In a stockpot, combine ribs and ginger with 1.8L cold water. Bring to boil, skim, drop to low simmer for 40 minutes.

Add the kelp ribbons. Simmer a further 25 to 30 minutes until tender.

Salt at the end. Garnish with spring onion.
