The most family-friendly soup of the month. Sweet corn balances the savoury ribs, gentle on the stomach, and welcomed by every member of the household. Many Chinese postpartum nannies put this on the table from week one to remind a tired mother that food can be simple and good.

Pork ribs 排骨
2 cobs
Fresh corn on the cob 玉米
cut into 4cm rounds
4 slices
Old ginger 老姜
4 dates
Red dates (jujube) 红枣

Method · 做法

Blanch the ribs in boiling water for 2 minutes. Drain and rinse.

Place ribs in a stockpot with 1.8L cold water and the ginger. Bring to a boil, skim any foam, then drop to a low simmer for 30 minutes.

Add the corn rounds and dates. Simmer a further 30 to 40 minutes until the corn is sweet and the broth is clear and gold.

Salt at the table. The soup keeps well; rewarm gently for the next day.
