The alternative-breakfast congee. Some mothers prefer brown rice over millet for the deeper fibre and earthy flavour, particularly from week two onwards.

Brown rice (long-grain) 糙米

Old ginger 老姜

Soak the rice for 30 minutes; drain. (Brown rice has a tougher husk than white; soaking shortens cooking.)

Combine rice and ginger with 1.2L water in a pot or rice cooker.

Stovetop: bring to a boil, reduce to a low simmer, cover, and cook 60 to 75 minutes until the grains have broken down into a porridge.

Rice cooker: porridge or congee setting, about 70 minutes.

Add toppings to taste (see common variants).
