Rinse the rice under cold water until the water runs clear. Soak for 30 minutes (this softens the bran layer and shortens cooking time).

Drain. Combine the rice with 2½ cups (550ml) of fresh water in a heavy-bottomed pot or rice cooker.

Stovetop: bring to a boil, reduce to a low simmer, cover tightly, and cook 30 to 35 minutes until the water is absorbed. Off heat, leave covered for 10 more minutes.

Rice cooker: brown-rice setting, about 50 minutes total.

Fluff with a fork. Serve warm with any savoury main.
