Sweet potato 番薯
Asian orange or purple variety preferred
2 slices, optional
Old ginger 老姜
Method · 做法

Scrub the sweet potatoes well. Leave the skin on for nutrients, or peel if you prefer a softer mouthfeel.

Cut into 3cm chunks.

Combine with the ginger (if using) and enough water to cover by 2cm in a small saucepan.

Bring to a boil, then simmer 20 to 25 minutes until a fork goes through with no resistance.

Drain. Serve warm in a small bowl alongside a meal, or eat as a gentle snack.
