A weekly tonic eaten in the second half of the month. Huang qi (astragalus) is a classic qi-supporting herb in TCM; combined with the long simmer of trotter and dates, it is the kind of soup mothers ask their family to put on the stove on a quiet afternoon.

1 trotter (~800g)
Pork trotter 猪脚
chopped at the butcher
10g (3 to 4 slices)
Astragalus root 黄芪
8 dates
Red dates (jujube) 红枣
1 tbsp
Goji berries 枸杞子
added in the last 5 minutes
5 slices
Old ginger 老姜
1 stalk
Spring onions
to taste

Method · 做法

Blanch the trotter pieces in boiling water for 4 minutes to remove scum. Drain and rinse.

Place trotter, huang qi, ginger, and dates in a deep pot with 2L of cold water. Bring to a boil, then drop to the lowest possible simmer with the lid on for 90 minutes.

Lift the lid and simmer a further 30 to 60 minutes until the trotter is fork-tender and the broth has reduced to about 1.2L.

Add goji in the last 5 minutes. Salt at the table. Garnish with spring onion.
