A gentle sweet soup that mothers reach for when they want something warm and comforting that is not another savoury broth. Snow fungus has a soft, jelly-like texture once cooked, valued in Chinese tradition for its quiet, yin quality.

10g (1 dried piece)
Dried snow fungus (white wood-ear) 银耳
soaked 30 min, torn into florets, hard core trimmed
2 firm apples
Apple (firm, e.g. Gala) 苹果
peeled, cored, cubed
6 dates
Red dates (jujube) 红枣
1 tbsp
Goji berries 枸杞子
added at the end
20g, to taste
Rock sugar 冰糖
Method · 做法

Soak the snow fungus in cold water for 30 minutes until fully swollen. Tear into bite-sized florets and trim away the hard yellow base.

Combine snow fungus, apple, and dates in a saucepan with 1L water. Bring to boil, then simmer covered on low for 35 minutes until the broth is gently silky.

Add goji and rock sugar in the final 5 minutes. Stir until the sugar dissolves.

Serve warm. Tastes good chilled in summer, but during the month, drink it warm.
