The classic Cantonese 杏仁糊 / almond paste in its bedtime-drink form, with black sesame folded in for iron and depth. Many of us know this as a childhood tong sui from Hong Kong dessert houses. In TCM the almond is a lung-supporting ingredient; sesame is kidney-supporting.

北杏 bitter north almonds, soaked overnight; omit if unavailable

Black sesame seeds 黑芝麻

Method · 做法

Soak both almond varieties in cold water overnight (8 hours). Drain.

Toast the black sesame seeds in a dry pan 2 minutes until fragrant.

Blend the soaked almonds and toasted sesame with 400ml fresh water until very smooth, 2 to 3 minutes on the highest setting.

Strain through a fine sieve or nut-milk bag into a saucepan to remove the pulp. (Save the pulp for porridge.)

Add the milk and rock sugar. Warm gently over low heat, stirring continuously. Do not let it boil hard, the almond milk will separate.

Serve warm in small bowls or mugs.

Bitter north almonds (北杏) are used in tiny quantities for depth; do not exceed 10g per batch and do not omit the soaking. They are harder to source in EU stores than sweet almonds, so the recipe works with sweet almonds alone if needed.
